I'm a 41-year-old chef for the Jacksonville Jaguars (NFL). I also have a small baking/catering business by the name of Le'Pastry Cabinet (The Pastry Cabinet). I specialize in luxury cakes, bakes, and treats.

I found baking to be very peaceful, a good form of therapy, and the end result was producing wonderful cakes and desserts. As I progressed with my skill level, I knew I wanted to pursue my own business in pastries and luxurious treats.

 

Can you share a memorable experience or achievement from your career as a chef?


The day I for the call to go live my dream as an NFL Chef. Also I recently placed 3rd place with Buddy Valastro's The Greatest Baker. I would say I'm living my dream and more.

What is your favorite part of being a chef and running your own business?


Having the freedom and creativity to experiment and come up with dishes that I will get to use in my future restaurant and upcoming cookbook.

What advice would you give to aspiring chefs looking to start their own business in the industry?

 

To stay up-to-date with industry trends. The culinary world is constantly evolving, with new ingredients, cooking methods, and flavour combinations being introduced all the time. Stay informed by reading culinary magazines, attending culinary events, and trying out new recipes. Attend seminars... No matter what, just start!

Lastly, how do you hope to see Le'pastry Cabinet grow and evolve in the future?

 

Using bold, new techniques. Continuing to stay knowledgeable in the world of Baking / Catering. I love a good challenge. Also, know that change is good in every aspect in this ever-changing field.
